The Peccavi Wines Range

We believe that iconic wines are made in the vineyard, so through extensive research, passion and dedication, have sourced vines from the world's finest clonal selections.

Wines bearing the “Peccavi” label are from 100% estate grown fruit, hand-harvested, hand sorted and handcrafted to produce outstanding wine in the Bordeaux style with new world methods.

Our 'The Estate' label wines are the very epitome of Peccavi Estate. Only the most exceptional fruit is handpicked and then meticulously sorted by hand. Fermentation involves a combination of hand plunging and pump over every six hours and after an extended maceration, the wine is matured in the finest French artisanal oak for two years.

Peccavi Sauvignon Blanc 2020

88% Sauvignon Blanc and 12% Semillon

Pale straw colouring and a bouquet of gooseberries, cassis and a hint of tropical fruit backed by faintly smoky vanilla oak. The palate displays great clarity and purity with a spectrum of lemon, lime and grapefruit unfolding to a palate that has capacity, volume and delicate textures. Precise acidity captures and creates a defined palate of vibrancy, finishing with a balanced crunchy lemon acidity

The wines are barrel fermented in 500 litre puncheons. 10% are new French oak and the rest are older Chardonnay barrels. Oak maturation is between 6 to 9 months.

This is a wine we make for aging Fumé Blanc style and is drinking well now.

Peccavi Chardonnay 2021

100% Gin Gin clone

It is fermented for 9 months in 30% new oak (sourced exclusively from Allier and Vosges) benefitting from battonage every fortnight for first 6 months followed by aging sur-lie unstirred.

Flint, nectarines and toasted cashews are dotted with subtle aromas of jasmine and brioche. A fine and focused entry of wet slate, white pear and porcelain fruit tannin, draped in sheets of crushed granite and quenching minerality. Firm and persistent to finish, laced with yet more white fruit and nougat. 

As well as fast becoming a local favourite it has established a strong reputation overseas with Peccavi supplying Chardonnay to both Harrods London and The Tippling Club in Singapore.

Peccavi Cabernet Sauvignon 2019

95% Cabernet Sauvignon from equal parts of Bordeaux clones 191 and 337 and 5% Petit Verdot

The varieties were vinified and matured separately in 225 L French oak barriques (around 45% new) for 14 months, before bottling.

On the nose comes a depth of aromas, summer fruits with cassis at the forefront, some rum and raison and maybe a hint of chocolate. Behind this are fine layers of lifted flowers, nuances of a musk perfume that smells deep and rich.

Structurally this is a powerful wine with an incredibly smooth texture and a wonderful mouthfeel that affirms the fine velvet tannins. The wine finishes with a great length and will be enjoyed for years to come.

Peccavi Syrah 2020

100% Syrah

Halliday - 95 points Gold

This Syrah is powerful, modern, and Rhône-inspired with peppery, spicy aromas of blackberries, dark plum and blueberries. There are hints of fresh chocolate/mocha oak and dried herbs. Underpinned by fine tannins, it is medium to full bodied, with a lingering core of dark fruit and smoky oak. Spicy, layered, gorgeous.

Treated quite specifically, the first 20% of fruit at the base of the open fermenter was whole bunch, with the balance of the fruit destemmed only, with no crushing. The cap was hand plunged over 10 days fermentation and then pressed into 1/3 new small format 228 L barrels to finish fermentation and matured for 11 months with monthly battonage.

Peccavi 'The Estate' Merlot 2019

100% Bordeaux Merlot Clone 181 – made by Jeremy Muller and Stuart Watson with 100% Peccavi Estate grown fruit

The Merlot Clone 181 is ideally located on a gentle north-eastern facing slope. The topsoil is dark brown sandy loam, which overlays a deep, well-drained oxidised sandy clay loam. The gentle slope and soil characteristics allow perfect conditions for high-quality merlot vinification. ‘The Estate’ wines aremade on site at Peccavi using the world’s best equipment for small batch winemaking. 

After being hand-picked in the early morning, this wine goes through the state-of-the-art Oscill Destemmer and hand sorted at a meticulous quarter ton an hour.  This wine is made from a combination of pump over in steel tank, open top fermenters and concrete eggs from the US, where it is pumped over, and hand plunged every 6 hours around the clock. The wine is then matured in 100% fine French oak, 60% new, sourced from the Saint-Emilion and Pomerol region, for 21 months.  

Perfumed and gravelly with heady layers of black cherries and chocolate with oak and hints of smoke and dried herbs. Full to medium bodied long and lustrous with a silky texture and core of plums, berries, oak and earthly herbs. Shapely, elegant with fruitcake like spice, this is a deep flavoured wine and marks a new dimension for Australian Merlot.
